The tea leaves are withered, steamed, neatly rolled and then dried and polished into small round pellets. This technique renders the leaves less susceptible to physical damage, retaining the most flavor and aroma. The smaller and shiner the pellets- the fresher and higher the quality the teas are. The tiny pellets may have acquired the gunpowder name due to its resemblance and smoky aroma to that of gunpowder pellets of a canon. The tightly rolled gray-green pellets “explode” when the leaves unfurl in the cup. Brew our Pinhead Gunpowder at 160°-180° for about a minute.
