This variety of organic oolong tea is fermented like black tea, and ends up looking like one. Oolong tea (or “wulong” tea) is between a black tea and a green tea, because it falls somewhere in the middle of the processing scale (black tea is the most processed, or oxidized). Try placing a pinch of loose oolong – about a gram – directly in a mug and steep (180°-190°) until the leaves sink to the bottom. It's taste is unique – light and aromatic with a smoky sweet, roasted flavor that pairs well with savory foods. The dried leaves are long, wiry twists that can be steeped more than once.
