Green teas
Green tea starts with the same plant as black tea - the camellia sinensis bush - but the processing is very different. The leaves are steamed or roasted in order to inactivate the enzymes at the first stage of processing. After this it is rolled, then fired at a high temperature to fix the flavor of the tea. We prefer Japanese style steamed green teas, for example our very high end Tamayokucha or Orange Sencha - they are lighter in the cup and on the palate; like a fine champagne!
