Traditionally sencha is steamed for less than a minute to prevent oxidation, the leaves are then rolled, shaped and dried, resulting in the familiar and customary thin long cylindrical shape. After the drying process the leaves are fired to preserve and add flavor. Japanese Senchas are greener in color than those produced in China due to the initial steaming process and tend to have a more vegetal flavor. One can brew 2.5g in an 8oz mug for anywhere between 1-4 minutes. Use a lower water temp (165°-185°) and a shorter steep time you can get several infusions.
